SUMMARY:

From the ethnographic research that will be carried out in this study, based on the memories and life stories to be reported by the communities of the Island of Mozambique, the sociocultural transformations of the gastronomy of the Island of Mozambique will be sought. During the conversations that will be held with the local communities of that Island, the changes that have taken place in the diet of the people can be identified, looking at the influences caused by the migratory movements that for decades took place on that small Island. To this end, data collection instruments will be used, such as: field diary, participant observation, photographic records, collective interviews and life stories. As a result, the work will be able to approach aspects of the food of the local families, the typical dishes of the Island of Mozambique, its characteristics, the cultural and identity connection of the people with some dishes, as well as the impact that the changes in the food preparation process have brought in their lives. Bearing in mind that the meal preparation process involves many materials, the instruments used in the food preparation process can be identified, as well as the testimonies of those involved in the flow of products from the farm to the markets. Therefore, to materialize the objectives of this study, the proponent will have to travel to Island of Mozambique in order to carry out the fieldwork.
