Resumo (Abstract) do trabalho em Inglês: The provision of school meals is a right guaranteed in Brazil through the National Program of School Feeding (PNAE), which aims to contribute to students learning and development, while strengths family farming, and promotes a healthy, high-quality, and environmentally suitable nutrition. In this work, the authors foresee the inclusion of Non-Conventional Food Plants (PANCs) in school meals as a strategy to promote Food and Nutritional Security (SAN) and Food Sovereignty by rescuing cultural values, enhancing nutritional content, and strengthening family farming, thus valuing more sustainable agroecological practices. Thus, the objective is to evaluate the quality of school menus across the Costa do Descobrimento territory, Bahia, and to create a Practical Guide to introduce PANCs into regional school meals. The research proposes a descriptive statistics to analyze the absolute and relative frequencies of the variables over the 8 municipalities within the territory. The data analysis will include the regional school menus; the content of public calls for family farming products for the school meals; the percentage of purchases from family farming for school meals; the list of products from the Food Acquisition Program (PAA); the public reports from the Food and Nutrition Surveillance System (SISVAN), and photographic records of PANCs found in the main street markets of the territory. The quality of the menus will be assessed using the Food Security Coordination Quality Index (IQ COSAN), and the identification of PANCs will be determined by their presence in the analyzed menus. With the diagnosis and effective analysis of the use of PANCs and the quality of the regional school, and the publication of the Practical Food Guide, this work hopes to contribute to guiding nutrition professionals and to the development of the Food Security Plan for the municipalities of Costa do Descobrimento.
